VoiceOver issues

I am having problems with clicking on stuff and making it work with VoiceOver on. Sometimes I have to turn it off for it to pour, put stuff in a bowl, and stiring things is hard, flipping through a cookbook is a pain when it doesnt tell you what you are looking at. Is there any way you can help and fix it so its easier to maneuver on my iPhone.
